BELT Sandwich

So, this is got to be one of the best sandwiches I've ever eaten. Yes, I say that a lot but still! There is so much going on with flavors here and it's amazing. I love the added melted mozzarella cheese on top, it just really helps bring this sandwich together. And arugula never disappoints.

BELT Sandwich
Recipe adapted from Tartine and Apron Strings

sourdough bread, sliced and toasted
pesto mayo
tomato, sliced
bacon, cooked
fried egg
mozzarella cheese, shredded
pepper, to season

  • Preheat oven to broil.
  • To assemble the sandwich, spread each piece of toasted sourdough with the pesto mayo, place arugula on the bottom piece of the bread. Add the sliced tomato, bacon {amount desired} and fried egg on top of that. Place the top piece of bread on top and layer it with mozzarella cheese and season with pepper.
  • Place in the oven and cook until the cheese is melted and lightly browned.
